what would i need to major in to know all the strategies in creating a course?????

Landscape architecture is the closest degree program. Even then, the best way to learn course design is to link up with an active experienced designer and watch what they do for design projects. There are no fulltime jobs in course design. Even the most active designers have some other income source or occupation.

Like any other degree, Landscape Architecture will do little to train you in actual course design. What it does do is give you the tools to learn. Like Chuck says, the real training comes from learning from good designers.
Some of the worst courses I've played were done by licensed LA's or Civil Engineers. It's not because they're not good LA's or engineers. It's because they don't have any knowledge of the game. I have an LA degree myself, but the best training I've gotten has been from helping out with the Des Moines Disc Golf Club and soaking up knowledge from John Houck. I think I've become a pretty decent designer and have done a few successful courses in my area.
If I could, I'd be doing this full-time. Alas, my course design career has netted me less than $1000 total.

Don't hesitate to offer your help. You can be of help to a designer without knowing anything.
Wear a light-colored shirt so he can bounce a laser range finder off of you as you stand where the basket is going to be placed. Even holding the bundle of marker flags and pulling out just one at a time is a big help.
Go ahead an offer ideas. I bet some will make it into the design. I think everyone who has ever helped me (including the land owner representatives) has given me at least one good idea I would not have thought of. As for the bad ideas, you'll learn something from the explanation of why they are bad.
