The only factor that changes is the direction of gravity in relation to the disc plane, and it's less apt to matter appreciably in the faster portion of the flight. Aerodynamics are three dimensional. I think what we see more as throwers are simply changes in our power level and throwing mechanics when we get far off of our usual planes and heights.
