I played Ryan Ranch in Monterey recently - it's 27 holes, an excellent challenge, more-or-less central in the state ...

... also know a guy who's been playing up and down the central valley - he says there's some good courses there too (Fresno, Boogersfield, etc.) although frankly I prefer Monterey ...

I'd say Monterey or Santa Cruz would fit the bill nicely.
