Is this a stroke?
I was lining up to throw a thumber and when I got it straight above me, my disc hit a branch and was ripped out of my hand. The disc fell straight down behind my original lie right at my feet.
I kinda felt that if I had let go of the disc that it would be considered a throw, but not if it was knocked out of my hand.

This is a stroke What you're talking about I dont believe would be considered a stroke since it fell behind your original lie, and you hadn't meant to even release it.... Maybe if it had came out PAST your body and original lie... I could be wrong though

I believe if your hand is in the forward motion of throwing and the disc comes out, it is a stroke/

Based on QA12, which is now official in 2012, it would count as a throw (not a 'stroke') since you were in the forward part of your throwing motion: http://www.pdga.com/files/documents/...A_v12_2011.pdf

How about this:
I threw my second shot on a hole, hit a tree about 5 feet in front of my lie and the disc bounced straight back at me. Apparently my reflex in that situation was to catch it. My card agreed that the catch was reflexive (and thus unintentional) and that the disc would have hit me regardless. I counted it as a throw and made my third shot from the same lie (I was still in my stance when I caught the disc). Is that the correct interpretation?

Yes. This was covered in this Rules School article right at the end:
