I would definitely put in the Gator and possibly pick up a Champ or Star Roc3 as a stable to slightly OS mid. I would also suggest a TL or Discmania FD as a straight fairway.
 
I really like your approach to your bag. If you want to minimalize more:

Look at how Ken Climo and Philo Brathwaite (and others) cycle their putters, using only one mold for all putting and driving. Your McPro's should be stable enough to cycle (heck, if Philo does it with classic gridstamps...), but it depends how fond you are of the Nova. It's too deep for my preferences.

If I was stuck with just my Mako3 I think I'd do okay, maybe, but I'd really miss the natural fade and turn options of my roc cycle. Let's say you have a tight tunnel where you need to go straight but hook the disc around something 200' down and you don't have room to hyzer out wider to the right (rhbh) to create the fade angle you need. Sure, the Mako3's going to get you through the tunnel but it's going to have a heck of a time getting you behind that obstacle. Your McPro's are designed to provide this fade option and beat in to provide the straight and turn options as well.

The gator is where I get hung up in my own bag. The poor thing keeps coming out and going back in. I throw well with it and it fits in well but I don't want to need it. Some people use it as a headwind putter which eliminates the need for an OS putter (probably not an issue for you).

I think you're covered for fairways if your Leopard3 maintains some of that unusual stability they seem to have. With enough time you could cycle Eagle X's to eliminate the Leopard (use DX to get there quicker), but personally I think the Leopard is a special disc that can't be replicated by a worn out version of another mold.
 
These are just my $0.02 'tweaks' you might consider:

1. Try a Champion Sidewinder to compliment (or perhaps replace) your Valkyrie(s).
2. For a more overstable mid than the Mako3 (which is a great disc), you might look at the Compass or the Buzzz or the Roc3 (I don't like the feel of the Roc3 in the hand; ergo, I use the Buzzz myself).
3. A more brightly colored Nova (red/brown will disappear in leaves/pine straw one day).

Rest of your bag looks fine.

As to the Gator conversation, I am returning to it for my overstable approach disc; it's consistent, reliable, and gets what I want done, done. It's also a very good putter when the wind is beating my face. Even if I don't use it much, it's a good disc to have in the bag for when I do need it.
 
.02 cents on drivers.. If the valks are at 300 and Leo3 at 275, perhaps and throw something Teebird in place of valks and fl until teebirder in solid 300+ range. Dial that in and valks will get 350+

Im going added a Gator and Roc3 to try out for the OS mid spot. Also looking at Removing all the Valks until I throw father and adding Teebird or Teebird3or TL or TL3 ?Don't know what plastic tho.

Drivers: See which you like for a Stable disc, that is more stable, than the most stable Valk in your bag, but not as beefy as the least stable firebird. This will let you begin to cycle in fresh discs and keep your gaps covered.

Mid: See if can find a disc slightly more overstable than your Mako3, if not the McPro, then a Rancho Roc or Wasp type disc. I suggested the blue because it's easier to see. The gator will by approach/wind/FH disc.

Putter: Try the Aviar for your putter that you can throw hard with off the tee box. If not this, then something like a Zone, Rhyno, Pig, Harp or learn to power the gator down.
