I love playing this situation some times...super simple, I have a smaller bag I bring for these occasions...just enough to carry 5 discs and a water bottle. I have a total of about 30 discs, and every time I play I usually switch a couple out, just mix it up for varieties sake. Anyway's
If I HAD to choose 3 and only 3. At this moment i would go:

Innova Champion BEAST 175g
Discraft esp METEOR 175g
Discraft esp ZONE 177g

all heavy. I could go without the ZONE and just put with my METEOR. I'd play with just 2!
well, we'll see

Otherwise I would choose

Innova Champ. VIKING
Discraft BUZZZ

Can't wait for the snow to melt and have some warmer temp's I miss playing
