I'm looking for an OS compliment to my Pures for approaches, flicks, and windy putting. I want to stick with a shallow rim and flat top and must be beadless.

So far I've been looking at the P2, Jokeri, Zone, and Aviar3. Currently using Zero Medium Pures. Would the Gold or Opto plastic give me the stability I'm looking for?

I was searching for an OS bookend for my Judges for a while too and found that the premium Judges simply didn't do the trick - they fly with similar stability to a new base plastic Judge. I understand that the opto pure flies very neutral, so it sounds like you will run into the same issue of needing to bag another similar mold if you want that extra stability.

Nothing like a good Zone for approach flicks - nice and flat, shallow, and beadles. Also very, very OS, so check out a pro-D zone if you want it to more quickly beat into a slot with a little more overstability than your pures rather than a whole lot more overstability. Otherwise consider grabbing a P2 or aviar3 for that slot and throw a premium plastic zone in for a beefy overstable bookend to the whole lineup!

Zone or Harp are those slightly faster putter discs with lower profile that work well . Easy to find, etc etc

Otherwise I would say Try an Axiom Envy - Its not super OS but more so than a pure. And its one of the best throwing putters ever

Pure is my all time favorite approach disc. I carry an Envy with it. Envy is so good it's about to catch my Pure for favoriteness.

Yup, Envy for slightly overstable, Zone for very overstable. And Spike for flippy.

The Pure-Envy combo is tough to beat.

For alternatives in the Envy slot:

K1 Reko
Pa2 (feels similar to a Pure and is FLAT)
Pa1
Wizard
Steady
Shield
Challenger
K3 Berg

For more OS
K1 Berg
Harp
Zone
Slammer
Pro Pig

Harp, Envy and Jokeri can all work here, just depends on how much beef you want.

Beef-wise, just lookin for a 2ish fade. I have a buzzz OS if I really need a meathook, but I want a putter with a little bite for any windy putts and some get out of jail touch shots. Maybe the occasional short tee shot if the hole requires some left finish.

To answer your last question first, a GL or Opto Pure will season in, so even if you find a relatively OS Pure, it won't last.

There have already been some good answers for other discs. The Envy is a good disc, but my choices would be the P2 for "somewhat" OS (i.e. more OS than the Pure, i.e. a reliable fade), and the Harp for "very" (i.e. solidly) OS. The Aviar3 is almost a short mid to me, and may not be as OS as you want (it didn't seem to be OS enough for some guy named Paul McBeth, ut I digress...)

However, the P2 is much deeper than the Pure. It might not be a problem for fan-grips, but I power-grip for approaches, which feels great with the Pure but bad with the P2. I suggest to feel it before you buy, if depth of the disc has relevance for you. Concerning the flight, the P2 is likely what you search for.

The Zone feels similar to the Pure in my hand. Its rim is somewhat between at Pure rim and a Buzzz rim. The Zone is much more overstable though.

Zone. All the others just wish they were a Zone.

I bag a Pure, and then Shield, Caltrop, Jokeri and Harp in that order from least stable to most, my 2 cents is go with a basic plastic Jokeri, it beats into a great feeling/flying Driving putter for both FH and BH
