Is this common? As it pancaked right after hitting the ground, it jumped up at least 20 ft in the air to roll right next to the basket! As I saw it I was like "Holy ****! That was awesome!"

Any overhand throwers have similar experiences?

They're so overstable they rarely hit the ground flat, and heck yeah they skip when they catch an edge.
 
Yes, skipping is common, you should learn how to use it as an advantage, it will give you another way of going at certin holes.
 
In the last tournament I was in I saw a guy on my card throw a 150' long spike hyzer over a couple of trees and it was still able to generate enough skip to flop into the basket.
