Yeah Black Mouse is a victim of fire last year.
GG is very doable with a couple discs if you temper your expectations. It really can call for all the shots but most of the turn-over type shots are short and the long holes you can use a fairway straight and play for easy par.
Stafford Lake is an absolute beast to play blind and solo. Not sure I will be available but DM me when you have a date I might be able to hook you up with a guide for that.
Skyline in Napa is a bit of a drive from SF but also very rough to do solo and blind. Several blind holes with outrageous roll away potential.
I have not played the others in the area south and east and would need to check into the websites or maybe facebook pages for when they are open to DG but
Glen Eagles is one - not sure about 3-5 disc friendly

Monarch Bay is challenging and fun

Aquatic Park is popular but I think mostly for people close by I don't hear many people traveling far just to go there

North is Taylor Mountain where I am short-ish not exactly a destination course but amazing home course. It is like a mini version of Stafford Lake and Skyline

Rosa Park together with Taylor would make a good Pairing with a stop at a local brewery in between or after
https://www.dgcoursereview.com/course.php?id=11287 The info here needs updated. Its a full 18 now and will be in a tournament setup for the next week or so, so I think Udisc will be mandatory to navigate. Will take a variety of shots but very doable with 3 discs as it will be generally short.
